  • Bread: 2 thick slices of sourdough, multigrain, or your favorite hearty loaf
  • Cottage cheese: 1/2 to 3/4 cup, small curd if you prefer a smoother spread
  • Tomatoes: 1 medium ripe tomato (heirloom, vine, or cherry tomatoes sliced)
  • Fresh herbs: A small handful of basil, parsley, or chives (or a mix)
  • Olive oil: 1 to 2 teaspoons for drizzling
  • Lemon: 1/2 teaspoon zest and 1 teaspoon juice
  • Garlic: 1 small clove, grated or finely minced (optional but flavorful)
  • Red pepper flakes: A pinch, to taste (optional)
  • Salt and black pepper: To taste (flaky salt is great here)

Method
 

  1. Toast the bread: Toast your slices until crisp on the edges but still tender in the middle. A sturdy, well-toasted base keeps the cottage cheese from making the toast soggy.
  2. Prep the cottage cheese: In a small bowl, stir the cottage cheese with lemon zest, a squeeze of lemon juice, a pinch of salt, and black pepper. If you’re using garlic, mix it in now. This quick step adds a lot of flavor.
  3. Slice the tomatoes: Cut your tomato into thin slices. If it’s extra juicy, pat lightly with a paper towel to keep the toast crisp.
  4. Chop the herbs: Roughly chop basil, parsley, or chives. Keep a little aside for a final sprinkle.
  5. Assemble the toast: Spread the seasoned cottage cheese over the warm toast. Layer the tomato slices on top, slightly overlapping.
  6. Finish with flavor: Drizzle with olive oil, add a pinch of red pepper flakes if you like heat, and sprinkle with the chopped herbs. Finish with a bit more salt and black pepper.
  7. Serve right away: Eat while the toast is still crisp and the tomatoes are fresh. It’s best within minutes of assembling.
